전체적으로는 발베니인데 발베니 같지 않은, 근데 발베니같은 그런 느낌이다.
어쩌면 나의 편견일수도 있겠다.
발베니는 셰리를 잘 표현하지 못하는것 같다고 느꼈던 나의 짧은 혀끈이 만든 편견.
스튜어트옹이 생각하는 셰리의 기본이 이런것인가....
새삼스레 스튜어트옹이 대단하다고 느껴졌다.
못하는것도 아니고 안하는것도 아니고, 그냥 내가 모르는 거였다니....
이놈의 위린이는 언제 성장할까....

Maybe it's just my prejudice.
A prejudice born of my short little tongue, which had me feeling Balvenie just isn't good at expressing sherry.
Is this what Master Stewart considers the basics of sherry....
It struck me all over again just how amazing Master Stewart is.
It's not that he can't do it, and it's not that he won't. It's just that I didn't know....
When will this whisky newbie ever grow up....

개인적으로 그동안 접해 온 발베니의 거의 모든 제품에는 너무나도 발베니 스러운 발베니만의 특징이 있다.
'화사함이 느껴지는 꿀.'
더블우드 12년을 포함한 코어레인지의 거의 모든 제품에는 이 '화사한 꿀' 같은 특징을 매번 캐치할 수 있다.
아무래도 증류과정에서 얻어지는 부분일거라고 생각이 든다.
각 코어레인지들은 그 공통분모를 가지고, 캐스크를 통해 각자의 개성을 달리 한다.
아메리칸오크,버번,셰리,캐리비안,프렌치,포트우드 등등.
캐스크의 특성을 교모하게 화사한 꿀과 버무리면서 발베니의 위스키는 발베니만의 정체성을 가지면서도 개성이 있고, 고
도수의 술이면서도 '맛있다'라는 인상을 갖게 한다.
위스키를 처음 접하는 지인들에게 가장 추천하는 증류소이기도 할 만큼, 무난한것 같으면서도 싱글몰트 위스키의 개성과
특징을 어렵지 않게 풀어내는 것이 발베니의 장점이라 할 수 있겠다.
그 중에서, 발베니가 셰리 캐스크에는 어떤 진심을 담고 있는지 피니쉬 제품인 더블우드와는 어떤차이가 있는지 분명하게
자신들이 생각하는 셰리를 발베니스럽게 표현하는 위스키를 이야기 해보고자한다.

우선 위스키 좋아하는 사람들은 환장할 단어인 싱글배럴(싱글캐스크)제품이다.
처음엔 배럴이라고 해서 200L짜리 오크통인건가? 싶었는데,
케이스나 보틀라벨에 표기된것 처럼 병입 수가 캐스크당 800병 수준이고,
(700ml x 800 = ????)
케이스에 표기 되있듯 'European Oak Sherry Butt'으로 Barrel 보단 두배 이상 큰 Sherry Butt Cask에서의 숙성 표기가
되어있고, 거기에 모든 15년 싱글배럴 제품을 47.8%의 동일한 ABV로 뽑아내는것과 CS(Cask Sterngth)표시 조차 없기
때문에, SC이지만 물을 약간타서 47.8%에 맞춰 출시하는것으로 보인다.
(근데 왜 하필 47.8인거죠? 스튜어트어르신?나 이거 궁금하넹)
하지만 어쨌든 주옷맛탱 싱글캐스크 제품임은 부정 할 수 없다.
맛과 향을 살짝 풀어내자면,
뚜따 직후여도 거북하고 불편한 부즈 따위는 느껴지지 않는다.
킁킁 어?응?킁킁?없어?알콜없어?킁킁? 크흐으으응아앗!!
하고 깊숙이 빨아들인다면 코끝과 눈끝이 살짝 찡할 수는 있다.
역시 발베니표 꿀내음이 초반에 살짝 나지만, 이건 다른 발베니들과는 조금 다르게 느껴진다.
무난하고 화사하고 달달하고 여리여리한 발베니가, 어둡고 습하고 다크한 세월의 무게감이 느껴지는, 건과류 꽈득꽈득 씹
어먹고있는 셰리를 등에 업고 어부어부바 하면서 등장 하는 느낌이다.
어엌?베...베니야...너 등에 그거 뭐야..?그...그거 셰리 아니여??
싶게 무시하기엔 굉장히 존재감이 느껴지는 덩치 큰 셰리가 느껴진다.
그리고 굉장히 잘 말려진 과일느낌도 기분좋게 다가온다.
카발란에서 느껴지는 열대과일 같으면서도 뭐랄까 좀더 엘레강스?하다.
혀에 올림과 동시에도 꾸덕꾸덕하게 말린 건과류의 느낌이 강하게 퍼져들어오지만 그 강도가 거부감이 전혀 없고 실키하
고 고급지다는 생각이 든다.
이걸 아마 CS로 뽑아냈다면 입문자들에게는 어렵다고 느껴질 법 했을텐데, 50도 이하로 뽑아내서 그런지 꼴딱꼴딱 잘넘
어가면서 개성들을 하나 하나 다 느낄 수 있다.
맛에서도 발베니의 특유의 화사한 꿀을 베이스로 하는듯 하지만, 꾸덕한 셰리가 주를 이루고 있고, 약간 생일때 먹는 케잌
느낌도 살짝 묻어있다.
피니쉬도 발베니스러운 달콤함과 끈적한 셰리가 혓바닥에 짝짝 붙고 오랫동안 여운을 남긴다.

Personally, almost every Balvenie I've come across so far has a trait that's so very Balvenie, something only Balvenie has.
'Honey with a bright, floral lift.'
In almost every core-range release, DoubleWood 12 included, I can catch this 'bright honey' trait every single time.
I figure it probably comes from the distillation process.
Each core-range release shares that common denominator, and then sets its own personality apart through the cask.
American oak, bourbon, sherry, Caribbean, French, port wood, and so on.
By cleverly mixing each cask's character with that bright honey, Balvenie's whiskies keep a Balvenie-only identity while still having individual personalities, and even though they're high-proof spirits, they leave you with the impression of 'this is tasty'.
It's the distillery I recommend most to friends trying whisky for the first time, and I'd say Balvenie's strength is that it seems easy-going while laying out the personality and character of single malt whisky without making it hard.
Among them, I'd like to talk about a whisky that clearly expresses, in a Balvenie way, the sherry they have in mind: what kind of sincerity Balvenie puts into sherry casks, and how it differs from the DoubleWood, which is a finished release.
The Balvenie 15 Year Single Barrel Sherry Cask.
First of all, it's a single barrel (single cask) release, words whisky lovers go absolutely crazy for.
At first, because it says barrel, I wondered if it was a 200L cask,
but as noted on the box and bottle label, the outturn is around 800 bottles per cask,
(700ml x 800 = 🤔)
and, as the box states, it's labelled as matured in a 'European Oak Sherry Butt', a Sherry Butt cask more than twice the size of a barrel. On top of that, every 15 Single Barrel is bottled at the same 47.8% ABV and there's not even a CS (Cask Strength) label, so it looks like it's a single cask but brought down to 47.8% with a little water before release.
(But why 47.8 of all numbers, Master Stewart? I'm really curious about this one)
Either way, there's no denying it's a seriously delicious single cask release.
To unpack the nose and palate a little,
Even right after opening, there's no harsh, uncomfortable booze to be found.
Sniff sniff, huh? what? sniff sniff? none? no alcohol? sniff sniff? Hnnnnngh-aah!!
If you inhale deep like that, the tip of your nose and the corners of your eyes might sting a little.
As expected, Balvenie's signature honey shows up a little at first, but this feels a bit different from other Balvenies.
It's like easy-going, bright, sweet, delicate Balvenie walks in giving a piggyback ride to a sherry that carries the heavy weight of dark, damp, gloomy years, all while crunching away on dried fruit.
Whoa? B...Benny... what's that on your back..? I...isn't that sherry??
You get a big, hulking sherry with a presence way too strong to ignore.
And a feeling of really well-dried fruit comes through pleasantly too.
It's like the tropical fruit you get from Kavalan, but somehow a bit more... elegant?
The moment it lands on the tongue, the feel of densely dried fruit spreads in strongly, but that intensity isn't off-putting at all. It feels silky and classy.
If they'd bottled this at CS, beginners might have found it tough, but maybe because it's under 50%, it goes down gulp by gulp and you can feel each of its personalities one by one.
On the palate it seems to use Balvenie's signature bright honey as a base, but dense sherry takes the lead, with a slight hint of birthday cake too.
The finish, too, has Balvenie-style sweetness and sticky sherry clinging to your tongue, leaving a long echo.
Overall, it's Balvenie, but not like Balvenie, and yet like Balvenie.
Maybe it's just my prejudice.
